What do you do when you're a hungry Italian? If you're Darren Indovina, you open a restaurant in Monett, Missouri, that features some pretty awesome Cajun style food. Then you lavishly dish it out with a generous helping of southern hospitality.

Darren's journey to Monett was one born of necessity. Displaced refugees from Katrina, he and his wife relocated from Bay St. Louis, Mississippi, when she landed a job in rural Barry County. An electrician by trade, Darren knew he could work anywhere. But he missed the food. So he opened a small restaurant that served lunch: the Bayou Lunchbox. That soon evolved into The Bayou serving steaks, seafood and pasta dishes for lunch and dinner. This meant a move from Dairy Street to a more visible location on Highway 60.

The Bayou stays busy, but there's always room for more. The menu is varied, with some tastes difficult to find anywhere in southwest Missouri. Start your meal with an appetizer like Spicy Cajun Buffalo Wings or New Orleans BBQ Shrimp. Give the Muffuletta, a New Orleans specialty sandwich, a try or dive into a Fried Seafood Caesar Salad. You can also enjoy catfish, shrimp, oysters, crab cakes, steaks or pork chops. Wrap it all up with some southern desserts—New Orleans Bread Pudding, Southern Comfort Custard Pie, or Cherry Cordial Cheesecake.
